Baked Chicken Legs & Mexican Street Corn

These two items were successful pinterest finds! You can view them and other finds in my ideas.MealPlanning board. This was such an amazingly delicious and easy dinner! I also made a side salad to go with it but we ended up not even eating it cause the chicken and corn was so delicious!

The way I made it is a bit different than the way it was prepared on my pinterest link.

Mexican Street Corn recipe

Ingredients:
4 large ears of corn (or a bag of frozen corn)
2 tbsp. butter
sea or kosher salt and freshly ground black pepper, to taste
1/2 cup mayonnaise
1 + 1/2 cups Queso Fresco, crumbled or Cotija or Parmesan cheese, grated
4 tablespoons fresh cilantro, minced
4 teaspoons chile powder
1 + 1/2 tbsp lime juice
garnish: 1 lime, cut into four wedges

Instructions:
Bring a pot of water to a boil. Then add the ears of corn and boil for 8 - 10 minutes.
Remove the ears from the water and shave the kernels off with a knife into a bowl. Then add the butter, salt and pepper, mayonnaise, sprinkle with cheese (I used Parmesan), cilantro, chile powder & lime juice. Mix together. Serve with lime wedges (if you feel fancy).

This is our new favorite side dish! It's a must try! Enjoy!
